Lemon-Herb Marinated Chicken (Served with Tri-Color Penne & Spinach Salad)



   This is delicious lunch if I do say so myself, and I do! haha!  ;) Not difficult at all! I just marinated the chicken for about 30-40 minutes in the refrigerator while I did other things. After, you take it out of the fridge it takes about 15-20 minutes cooking. You choose whether you want to throw in the marinate along with chicken into the pan or simply the chicken. I opted to toss it all in, and it's no big deal if you are considering the oil, because it all stays in the pan; and you end up with nice crispy bits. Yumm! So, are you ready? Here it is:

2 lbs- Chicken Breast Steak/Fillet
3/4 Cup -Olive oil
 1- Squeezed Yellow Lemon
1 tsp- Lemon Pepper
1/4 tsp-Ginger (ground)
1/2 cup- cilantro cut roughly
1/3 cup- Onion sliced (white)
1/2 tsp- Salt
1 tsp- Chili flakes
2- Garlic Cloves Minced

Prep the Marinade:
Add olive oil, lemon, lemon pepper, ginger,cilantro, onion, salt,chili flakes, and garlic(wisk/mix all together) into a container that you can place your chicken to marinate for a good 30-40 minutes. Place your clean (cut if necessary) chicken breast into the marinade and combine well. Cover your container and let sit in the refrigerator. That's it! Now just wait....

Once, the marinated chicken is ready just put it on a hot pan. I decided to use all of the marinade in the pan as well so, I had no need to add any extra oil. I just turned it over a few times, waited for the liquid to evaporate. Then, it started taking a bit of browning-that's what we like! When it's ready just take it out, you'll see all the oil will be in the pan so not very much is absorbed and it is delicious.

I chose to use a Tri-Color Penne with the chicken, but you can add any pasta or rice if you would like. Honestly, the tri-color element is just for visual effects and doesn't change the flavor of the pasta. I boiled a pot of water with a generous amount of salt. I then dropped in 1 box of pasta and let it cook for about 10 minutes. Follow the instructions on your package for best results. Then, rinsed out the water-I added salt, pepper, and a bit of "fake butter".

For my salad I chose spinach, you know you have to get those greens in your diet! I just grabbed a big bunch of baby spinach, and added sliced red onion, tomato, and avocado. Finally, drizzled a bit of ranch dressing!


This is a very easy prep type of meal and you are rewarded with just delicious flavors. By the way it is not spicy at all, but feel free to change any of the ingredients to your liking! Happy cooking!

Beef Soup/Stew (Caldo de Res)
























                                                                                                                                                                 


Hello! So, today I have made beef soup/stew or caldo de res. I'm not sure if it can definitely be considered a stew because stews are usually thicker, but I do know it's a great soup that will warm and fill you up. I have done it a few different ways over the years, and I think I'm happy with this recipe. It's not difficult at all;it simply takes time to get all the lovely flavors to combine together.

 2 lb. Beef Shank-Chamorro de res
4-5 Carrots peeled & sliced med cut
3 potatoes peeled & cubed (not too small)
2-3 whole fresh corn-cut in half
1/2 small cabbage cut roughly in large sections
2 Mexican calabacitas or chayote (today I used the calabacita) Mexican squash
2 tomatoes sliced
1/4 onion sliced
2 springs of peppermint-yerba buena
1 large clove of garlic
1 JalapeƱo or 2 Serrano chiles sliced (if you like heat keep seed)
Salt to desired taste

I purchased my meat in two chunks, but you can ask your butcher to pre-cut if you prefer. After, rinsing/washing your meat place it a large pot with plenty of water, a large piece of onion (extra from what is listed above), the garlic clove, and just a little salt. I don't like to use a lot of salt in my food, and specially with something that will boil so long it's easy to over do it with salt, so take it easy( you can always add more later but you can't take away).

 As the meat begins to boil, a brownish foam from the meat forms above (it's normal)-Just take your spoon and clean that out so that your soup will look clear/clean.

As I mentioned, my pieces of meat were whole, so as they had cooked I took them out and cut them into small chunks. I left the meat outside the pot while I added the other stuff. This is done so that your meat doesn't fall apart, and it was pretty much done.

I did however, put back in the bones from the meat because this essentially flavors your soup. I added the sliced tomatoes,sliced onion, and the halved corn. I also took out the piece of garlic, and the first onion piece I put in. I added two sprigs of peppermint or yerba buena, and left it alone until the corn was done.

Meanwhile, I cut all the other vegetables. Once, the corn is done, go ahead and take it out or leave it a little longer if you want. Drop in the potatoes, carrots, and cabbage pieces. If you choose to add chile, you can add it at this time. For a milder taste just take out all the seeds, it still flavors your soup nicely.

Watch your potatoes because you don't want them to fall apart. When they are nearly done, put your meat back in the pot and let them boil together. Lastly, add your pieces of calabacita; but if you're adding chayote then you'd have to add before the potatoes because it takes longer. Where Mexican squash falls apart very easily. At this time taste for salt and add if you would like.

So, this is the way I do this soup-it works for me. And I feel that since everything is done in stages all the veggies turn out very nice and nothing falls apart. I hope it turns out delicious for you.

Once you serve add all your veggies and a little bit of the meat, and your corn- you can also add squeezed lemon.

Dealing with Anxiety,Depression,Panic Attacks

Hello friends...



I have seriously debated about making this post public because in my personal life I'm extremely introverted and resolve to dealing with any problems privately. Apart from family and a couple close friends I usually don't discuss my problems with others. Because I feel that sometimes people only ask things so that they will know some of your weaknesses and be able to hold them over your head. I know that this sounds really insecure, and I guess that even at my age..I am that insecure girl.




Well, I'll start by telling you that I have had anxiety since I was about 18; I will be 33 this June, so for about 15 years anxiety has been the constant,unwanted companion by my side. It's sad to say but it has controlled my life and lifestyle so much that there are so many things that I have avoided doing or simply made 101 excuses as to why I could not do them. I'm naturally an introvert and I do enjoy being alone for the most part, however I also have to say that I many times avoid social settings because I feel awkward and out of place. I think that I could probably even trace feeling out of place back in high school, I didn't feel smart enough, pretty enough, or even bad enough to really fit into any group. It is true that life's problems and stresses usually make anxiety worse. Although, I have had good times in between the not so good, last May 2013 was definitely the worst of all.

I would define it as having a nervous breakdown, as awful as it sounds to admit it to you who is reading this. Because to a certain level it does make me feel ashamed to feel and to know that my insecurities, issues have broken me so much. I can tell you that it was the worst thing ever, it made me doubt myself so much. I felt like my constant panic attacks were getting worse each time, until I ended up going to the emergency room thinking I might be having a heart attack. If you have not ever experienced anxiety to such a severe level, I should explain that usually what happens is that your mind, negative thoughts take over;essentially it's you fighting against yourself once those thoughts turn into real physical symptoms.

Because my anxiety turned into something that I could not control at all for the first time I resorted to taking medication. This is something that I had always avoided because I din't want to be dependent on a drug. At this point I couldn't walk outside without feeling an extreme fear and feeling dizzy every time.

Sometimes people think, well how can you be so weak minded and not be able to control this? I would have to answer by saying that I don't consider myself weak minded. I have tried to learn, teach myself methods/techniques in order to make myself better. However, once you do everything possible and like I mentioned, it might help at times, but then you know you will never completely rid yourself of it. I have cried,prayed, talked it out, tried to escape, hide out so many times and then it's there. I really wish I could be that carefree person that does as they please without worry to repercussions, but I have never been that person. I am the person that over thinks every situation/conversation, and then over analyzes all the factors. If it were as easy as just not being a worrier, I suppose it would be more simple but this is not the stress free world that we live in.

I accept that I am a completely flawed person, not for my issues and insecurities-rather because my fears have taken over of my potential happiness. To me this is the one most-important thing in life "happiness"; it seems that we should all be entitled to sheer joy of life but sometimes working at being happy gets so hard. I doubt myself so much because I constantly remember past mistakes, memories, what I could-should have done, and what I fear I may never be able to do. I'm fully conscious that my past is gone, the future feels further from my wishes because living the present can get quite difficult. I should clear up that I'm not that dark-depressed person, I love to laugh all the time. But when it gets down to being alone then we have to listen to ourselves and face our problems and simply live the life we have been dealt with. I know that this may be sounding like the lamest post you ever read about, but I'm a real person and I have real problems.

Aveeno Positively Radiant Targeted Tone Corrector


Aveeno Positively Radiant Targeted Tone Corrector #RadiantWithAVEENO 

  I received the Aveeno Positively Radiant Targeted Tone Corrector from Influenster a few days ago and as soon as I was notified I was pleased. I had already been using the Aveeno Positively Radiant Daily Moisturizer (SPF 15 UVA/UVB sunscreen) for a few years.

 Just to give you a bit of my personal skin history I was actually recommended to start using the moisturizer by a dermatologist a few years ago. I began having problems with my skin completely changing from normal to completely dry patches and entirely affected by rosacea. I tried going to the drugstore at first and buying creams over the counter that didn't work at all. Then decided to go to Macy's and try the redness relief line (which was pretty pricey for what it did- but that's a story for another day). So, finally with my skin completely broken,dry, and already affected in tone I decided to see a professional and was actually prescribed a couple of things an addition to incorporating the Aveeno moisturizer since it not only has SPF but also claims to even out tone and texture. I stuck with it, and it worked quite well; my skin has improved now over time but I still have darker areas on my face from where the skin was badly damaged.

 Of course, getting the  Aveeno Positively Radiant Targeted Tone Corrector was absolutely good news because I do have skin that needs improvement with dark spots and to even out in tone. Which is precisely what the tone corrector will do!

Here is some info from the back of the packaging:
"Positively Radiant Targeted Tone Corrector is clinically proven to fade the look of dark spots and uneven tone after just two weeks, with continued improvement over time. This effective, yet gentle formula combines ACTIVE NATURALS Total Soy Complex-one of nature's most effective dark spot and uneven tone fighters-with vitamin A to reveal softer, smoother, more radiant skin that lasts. Works for all ethnicities."

The tone corrector is oil-free, non-comedogenic, and non-irritating. I have been cleansing my face and adding the tone corrector before moisturizing in the morning and before bed. I would agree that it's gentle and has had no negative effects as my skin can be quite sensitive. Now, going back to update on my skin it has changed drastically where about five years ago it was suffering and horribly dry; it completely flipped in the last two-three years became oily/combo (neither is pleasant, I wish I could just go back to normal skin). However, with that being said I can appreciate that the Aveeno line is oil-free and will not affect or irritate my skin.

As far as actual results to the naked eye (as of today it's too soon-using  the corrector), I'd like to give it more time-because I have to be a realist and know that just as my skin was affected over a long period of time with different contributing factors the skin needs time for repairing itself even with the aid of products. But I'm glad I can start targeting problem areas and hopefully see an improvement.

Get To Know Me- 25 Questions Tag!



1. Do you have a middle name?
Yes I do :) My middle name is Sandra; only my family calls me by my middle name at home, at school& work I have always been called Blanca. I was called Sandy until I was around 10 yrs old, and decided that I didn't want to be called Sandy anymore, but it was kinda cute.

2. What was your favorite subject in school?
I really enjoyed art! I wasn't extremely great at it but I really liked it.

3. What's your favorite drink?
I hot tea, iced tea in hot weather, and my guilty somewhat prohibited drink soda! ugh!


4. What's your favorite song at the moment?

I have too many, love Ellie Goulding, Lana Del Rey, Elle king, Beyonce, Rihanna, Nicki Minaj, Miguel (which I have gotten into most recently) Rap/hip hop, R&B- I don’t think I could decide because I love music but always rotate what I listen to so I don’t get bored! Gemini trait!

5. What would you name your children?
I used to tell my sister and mom that I would have 3 girls and name them Noemi, 
Nataly, & Nicole…funny thing is that I don’t have kids yet but these names have been coincidentally used by my dear friends& family. One of my lifetime friends named one of her daughters Naomi (which is the English version), my god-daughter’s name is Nataly (my other lifetime friend’s daughter), and Nicole was recently born to one of my nieces. I’m okay with that it just means I need to look up other names and keep hope that I will have at least one child, I think that as I’ve gotten older I really do look forward to it more than when I was a bit younger!

6. Do you participate in any sports?
No! I always hated playing group sports in school, more so when we had to play classroom against classroom. I don’t think I was any good at it. Blah! 

7. What's your favorite book? 

My favorite book is, and has been for a really long time:

Life Lessons by Elizabeth Kubler-Ross & David Kessler
Two experts on death and dying teach us about the mysteries of life and living.
Really a great read, I’d definitely recommend it to anyone looking for a great reminder of life’s perspectives. It’s quite a short book, easy to read and so meaningful, would be the best way to describe it!

8. What's your favorite color?

I will have to cheat here: I like black, blue , brown, purple, aqua/turquoise ..What can I say a Gemini needs options,  that’s really bringing them down for me!

9. What's your favorite animal?( I know technically an insect)

Butterflies!! I don’t even have to think twice. I have a bit of an obsession with butterflies! I love their meaning; at least for me it stands for new beginnings, new found HOPE, FAITH, BEAUTY, GRACE…I have thought of getting a butterfly tattoo for a long time but haven’t had the courage, plus my mom always says that I shouldn't. But, perhaps someday…I might because it’s really symbolic in my life!!  

10. What's your favorite perfume?

I don’t know that I have or can choose a favorite right now, just because I used to collect perfumes (I mean I used to buy more in the past). I’m trying to go through them now, so I never wear the same perfume- I always rotate them (I might do a perfume collection if you want to see them, even if it has been tamed quite a bit in the last few years!)


11. What's your favorite holiday?
 Christmas is my favorite holiday…I really do like the meaning behind Christmas because I am Catholic and I just feel extra cheery around the holidays, plus I love to cook and eat of course!!

12. Have you graduated from High School?
Yes! A really long time ago, gosh I’m old!


13. Have you been out of the country?
Yea, I was born in Michoacan, Mexico! I’m very proud of being Mexican, but really do enjoy my humble life in Los Angeles!

14. Do you speak any other languages?
Yes, my first language is Spanish! Like I mentioned above I feel very proud of my roots. If I ever have children this is definitely something that I would teach them, because in my opinion it’s very important! I also took French in school, so many years ago, that I don’t remember much of it!

15. Do you have any siblings?
Yes! I’m the last of 10 children!! I know that’s a lot! I have 4 brothers, 4 sisters, 1 sister passed away as a baby (the only one born with blue eyes, whom I never met).

16. What's your favorite store?

For clothes I like Macy’s, for drugstore cosmetics Rite-Aid, CVS, or Walgreen's-budget friendly :).

17. What's your favorite restaurant?
I don’t do a lot of fancy eating out because I cook pretty much every day at home. My guilty fast food faves are pizza or hamburger. If I were eating out I love pasta, shrimp, chicken…Real Mexican  food is my favorite. I really am a foodie!! <3….also like to experiment with new recipes!

18. Do you like school? 

Yes, I have always thought that I might go back at some point. Honestly, as we get older there’s less time for the things that we like to do and more is used for the things we have to do. But if you’re a youngster I can’t stress enough-GET YOUR EDUCATION, IT’S SO IMPORTANT!!     

19. Who are some of your favorite YouTubers?
I have so many really! Dulce Candy is up on my list because I share a similar background with her (she’s from Michoacan, Mexico as well) I would love to meet her someday <3 !! I admire her for how far she has been able to go with her work/career; it really takes hard work and dedication to be a high achiever!


20. What's your favorite movie? 

I like a lot of movies; I don’t think I have a favorite though. The genres I enjoy are: comedy, romantic-comedy, horror, drama- (oh! Also animated/cartoons-yes! I’m a big kid!)… I think I recently noticed that I like watching romantic- comedies because I secretly wish that real life were similar, it keeps that light in my heart alive ;)! 

21. What are some of your favorite TV shows?
How I Met Your Mother (which sadly ended recently; re-runs are awesome!),
 Big Bang Theory (Sheldon <3), Two Broke Girls, Grey’s Anatomy!!

22. PC or Mac?
I’m definitely an oldie; I have only owned desktops…because they are most economic, work for me quite well. I have considered getting a laptop in the future-any recommendations??
 
23. What phone do you have?
Most people think that it’s weird that I do not have a cell phone! I don’t really talk on the phone, so I don’t see the need for one. I have owned a couple in the past but gave them up because I really didn't need them.

24. How tall are you?
I’m 5’2 but I really don’t feel too short, unless I’m standing next to someone who is quite tall.

25. Any pets?

Yes, we have a family pet! His name is Rocco, he’s a miniature Pinscher (named by moi). We've had him since he was 3 weeks old!!

Peanut Butter Cookie Recipe

Hello! So, you may have now noticed that I've been into baking recently! I admit that I'm not the greatest baker (even though I do love to cook) but I love to learn new things and of  course enjoy the finished products ;) Give it a try, I must say that I really enjoyed how these cookies turned out (happy me!!)...


Ingredients:

1/2-Cup Butter
1/2-Cup Sugar
1/2-Cup Brown Sugar
1/2-Cup Peanut Butter
1/2-Tsp. salt
1/2-Tsp.Baking Powder
1/2-Tsp. Baking Soda
----------------------
1-Egg
----------------------
1 1/4-Cup Flour

Cover 2-3 hours
Bake at 375 degrees 10-12 min
I made 24 cookies (about 1 tbsp sized)


In your mixer put in butter,sugar,peanut butter, salt, baking powder, and baking soda (mix until combined).
Then, drop in your egg-mix everything again. Lastly, drop in the flour and mix until you have your batter;which needs to be refrigerated for at least a few hours so that it's easier to handle (it will slightly harden a bit).

After taking your batter out of the fridge-choose a spoon, measuring spoon, ice cream scoop (whatever works) to get uniform sized cookies. Once you measure them, take the amount of batter separated and turn it into a ball with your hands. Line your baking pan/dish. Evenly line up the balls of batter so that they will have enough space to spread out as they bake.

I was able to fit nine cookies at a time so that they would have enough space to expand. Then, just taking a fork, you can press down on the ball of batter-then press down in the opposite direction and create the hash tag on the cookie (I found that even if I pressed hard my hash tags didn't show up too much at the end,but really didn't bother me because it doesn't affect flavor!!). Place in your oven 10-12 min at 375. I liked mine best left over a little over 10 min because I got that extra toasty,crispy cookie.

This was my final result!! They are really good; not too sweet, they have that peanut butter taste of course but it's not overwhelming :) Give it a try and let me know how they come out! Special Lemonade Recipe

Hello friends!
As we are all hoping, some wishing for warmer weather...I will leave you with this "Special Lemonade Recipe". The weather hasn't been all bad in Los Angeles-except for a couple cloudy days in between every now and then. However, I'm sure that sunny days are right around the corner! For those hot summertime days here's is something to cool you off!! Enjoy! :)

You will need:

4 Cups- Fresh Squeezed Lemon Juice 
(I will not mention how many lemons because they come in different sizes)
3 1/2 Cups- Water (or more)
2 Cups-Sugar
Ice-(As much or as little you prefer)


Choose yellow lemons that are nice and juicy!

Cut all your lemons in half. Check out these giant lemons!
They really were this big (bigger than the palm of my hand-the picture is not zoomed in).

Measure out 2 cups of sugar.

Here is where the actual work comes in....juice 4 cups of lemon juice; which will be divided in half.


In a pot pour in your sugar and 2 cups of the lemon juice (if you choose you can strain out the pulp and seeds left behind). 
I opted to pour in pulp and a couple seed that escaped,
simply note it can turn it a bit more tart-but it's lemonade, 

so it is meant to be!
Keep/save 2 cups of lemon juice to finish lemonade.

Fully integrate the lemon juice and sugar and start to heat up the mixture on a medium flame.

After 5-10 min you will see the lemon juice
 begin to bubble and you can turn off the heat.

At this point you will see your juice and sugar has turned into a syrup-like mixture and the color is much more vibrant. 
It's almost like creating a lemon concentrate that we 
will add to in order to fully develop it's potential.
This is what makes this lemonade special! Shhh! 

Don't give out the secret (just kidding).
 Let cool, you can place in the refrigerator to chill 15-20 min.

When you are ready to prepare your lemonade simply pour into your pitcher/container. We will combine the sugared-lemon syrup we created, 2 cups of lemon juice that you saved, 3 1/2 cups of water and ice. I like plenty of ice in my lemonade but that is a personal choice. If you feel that it is too tart or too sweet, 
simply add more water.  This will reduce the sweetness or extreme tartness.
